Are there more churches per capita in Las Vegas than in any other city in the country?

no

According to the 2020 Religion Census, Clark County has 42 congregations per 100,000 people. Compared to other counties, Las Vegas is ranked 3,135th in that regard.

Other counties have a much higher percentage due to smaller populations, which skews the data a bit.

If you go by metropolitan areas, the Las Vegas-Henderson-Paradise, Metro Area in Nevada is ranked 927th.

The region with the highest churches per capita is the town of Camden, Arkansas, population 27,389, which had 660 congregations per 100,000 people. Camden is followed by the Provo-Orem, Utah, Metro Area, which is the home of Brigham-Young University and a mainstay of The Church of Latter-day Saints.
